Dr. Marshall dedicated his life to the institution he loved. After earning his PhD in dairy science microbiology from the University of Missouri, Dr. Marshall joined the faculty and shaped the future of food science, mentoring countless students as a leader in the College of Agriculture, Food and Natural Resources, CAFNR. But beyond his research and teaching, it was the way Dr. Marshall made people feel that defines his enduring legacy. No tradition captures the spirit of Dr. Marshall's impact more than the annual Tiger Walk. Each fall, first-year students gather beneath the iconic columns to mark their entry into the Mizzou family. And at the heart of this rite of passage is a scoop of Tiger Stripe ice cream. Invented by Dr. Marshall, Tiger Stripe has become more than just a dessert; it is a memory shared by every new Tiger joining the Mizzou family. The people of Columbia knew Dr. Marshall not just as a professor, but as a neighbor, a mentor, and a friend. He poured his heart into his work and into his community, and the impact of that devotion is still felt today.
